Quick & Easy ‘Hungry Farmer Flapjacks’

Makes approx 12 flapjacks
150g butter
60g light brown sugar
5 tbsp golden syrup (can also use honey or maple syrup instead)
200g porridge oats
60g chopped dates (can use dried figs or cherries or cranberries or raisins instead)
100g chopped walnuts (or any combination of other nuts)
Preheat the oven to 180 or 350 depending on the nationality of your oven.  Lightly grease a 23cm square baking tin (or a 22-24cm round or a 26cmx16cm rectangle or anything in that ball park).
Put the butter, sugar and syrup in a saucepan and heat just until the butter has melted - remove from the heat - add the oats, dates & walnuts and mix well - turn out into prepared tin - level the surface and bake for 20-25 mins until golden brown around the edges but still soft in the middle.
Remove from the oven and leave in the tin to cool - while still warm, score into 12 bars (if using a nice metal tin and have children’s utensils I find a plastic knife works well whilst protecting the tin).
Enjoy with a nice cup of tea or with a cherry and elderflower martini as we did! :)
